Chili
     Chili is at the heart of Guizhou cuisine, adding bold spice and complexity to dishes like sour soup fish and street-side grills. Zunyi hosts one of Asia’s largest chili markets, trading over 750,000 tons in peak season and generating over RMB 7 billion annually. Guizhou accounts for one-sixth of China’s chili cultivation, with an annual yield of around 7.8 million tons. From chili sauces and pickled peppers to dried products, Guizhou’s chili exports are rising steadily. 
      Government-backed digital agriculture platforms and branding initiatives are driving innovation, making Guizhou’s chili industry increasingly competitive on the global stage.
